Hey I forgot to add... preparing matooke as I recall required the lady to dress in gomesi and kneel down properly not squat on a stool.  I was told it was bad karma for the food to "flash" at it during preparation.

Glen - I agree at gomesi is impractical esp if you are not brought up accustomed to wearing it.  The hours it takes to straighten that kitambala let alone the inner workings!!! and then the walking applied... bitengi is much easier to accommodate.

QS - just holler my way when you get in. you can eat matoke from the day you land to when you depart.  I can have a box delivered down to your daughter's place.  Do you also like groundnut sauce? Unfortunately customs are getting jittery - at importing in fish and meat products from home of recent even by the legalised importers.  Otherwise, I'd get you the semmutundu eyakabina to mix with the groundnut sauce.
